Meal ideas

Meal ideas (for balancing all food groups); These are no more expensive than the unhealthy eating we already do. You can buy all these items in bulk or frozen to save money.

I marinate all meats to enhance flavor. (You can use juice, garlic, soy sauce, etc.)


*Tuna fish salad on bed of greens, with shaved cheese, celery sticks, cherry tomatoes, and rye toast


*Boca burger with onion, tomato, romaine, Swiss cheese, and mayo on pumpernickel



*Salmon patties, curried green beans, sweet potato w/margarine



*Large salad with greens, peppers, tomatoes, olives, black beans, whole grain croutons
(or crushed crackers or garlic bread) with yogurt for dressing


*Baked fish on long grain rice with asparagus and cheese wedges


*Bean and cheese burritos with lettuce, tomato, cukes, and sour cream

*Wild rice with mushroom, topped with grilled zucchini and olive oil brushed chicken breast with Gouda cheese


*Grilled chicken sandwich; patty, whole grain bun, goat cheese, bean sprouts, honey mustard



I'm also a big fan of single pot meals, like:



Seafood pasta; multi-pasta with shrimp and fish; feta cheese, broccoli, carrots, and pimento



Chicken and rice with beans and salsa mixed in



Vegetarian goulash; pasta, tofu crumbles (you won't know the difference!), tomato sauce, onion, peppers, cheese
